  • 1.5oz cucumber juice
  • 3-4 cucumber slices, plus more for garnish (as pictured)

  • 3-4 mint leaves
  • 2.5-3oz tonic water
  • 1 tsp sugar (optional, for the sweet tooth


  1. Cut your cucumber slices using a mandolin. For the muddling cucumbers, cut circles; for garnish, cut long slices as pictured.
  2. Lightly muddle mint leaves, cucumber slices and lime wedge in a shaker (light enough that the cucumber stays mostly in tact – you get plenty of cucumber flavor from the juice itself).

  4. Add gin, cucumber juice and sugar (if using). Shake well and pour over ice.
